Into the Wild: A forest to table pop-up restaurant was a culinary collaboration by Chef Jefferson Alvarez, Swallow Tail Culinary Adventures & Le Vieux Pin Winery. This unique pop-up restaurant celebrated the wineries 10th Anniversary and Swallow Tail's spring foraged ingredients. Chef Jefferson brought it all together with his elegant, fine dining flair, his menu should not be missed.
The event featured 100% locally sourced ingredients and 100% locally forged Postmark Flowers. Yup, you read that right! We put on our boots and hit the forest behind my house with our clippers for the greenery. Thanks to a previous long commute across town, I knew of a few ditches and train tracks that were full of wild blooms. I also had a secret wild rose bush up my sleeve.
The end result was an amazing evening with incredible local and forged ingredients.
